White Fruitcake

Ingredients

1/2 c pitted dates
1/2 c apricots
1/2 c figs
2 c flaked coconut
2 c sifted enriched flour
1 1/2 ts baking powder
1 ts salt
1 c shortening
1 c sugar
1 ts rum flavoring
5 eggs
1/2 c unsweetened pineapple juice
1/2 cup over fruit mixture
2 1/2 loaf pans with paper
1/2 extend above all

Instructions

sides of pan. (Or bake in smaller pans.) Pour batter into pans, filling 3/4 full. Bake in very slow oven (275�) 2 1/2 hours or till done. (Have pan of water on bottom shelf of oven while baking.) Makes about 5 pounds.
