Wild Mushroom Risotto
Ingredients
5 tb butter
4 oz shiitake mushrooms
4 oz mushrooms stems removed
1 tb oil
3/8 c onion
1 1/2 c arborio rice
1/2 c dry wine
5 c broth
1/4 c mascarpone cheese
1/4 c parmesan cheese
1 tb parsley
4 quart casserole over moderate hea onion
1/2 at a time
1/4 at the end
1/4 cup broth
Instructions
vigorously so cheeses melt. Sprinkle with parsley. Serve immediately.
