Ravioli With Ricotta Filling

• 6 eggs
• 1,000 gr sifted flour
• 375 gr ricotta cheese
• 90 ml water (very cold)
• 90 ml water mix well to make a stiff dough (very cold)
• 5 gr parmesan cheese
• 3 gr salt
• 2 gr parsley (chopped)
• 1 gr pepper
• 5 slices wide
