Ingredients
- 2 eggs
- 3/4 c milk
- 1 c all purpose flour
- 1 c cornmeal (yellow)
- 1/2 c onion (chopped)
- 1/4 c vegetable oil
- 1 tb baking powder
- 1 ts sugar
- 1 ts salt
- 1 ts pepper
Combine first 6 ingredients in a large bowl. Make a well in the center and set aside. Combine the remaining ingredients. Add to dry mixture. Stir until moistened. Coat miniaturemuffin pans with cooking spray. Spoon 1 tablespoon batter into each cup. Bake at 425F for 15 minutes. Remove from pans and serve immediately.
