Ingredients
- 2 eggs
- 1 chicken tonight cooking
- 1 lb chicken (ground)
- 1 c seasoned bread crumbs
- 2 tb vegetable oil
- 1/4 c parmesan cheese (grated)
- 2 tb parsley (chopped fresh)
- 1/2 ts salt
- 1/4 ts pepper
- 1/2 ts basil
-Sauce for Chicken Cacciatore Hot, cooked spaghetti In a large bowl, thoroughly combine ground chicken, bread crumbs, Parmesan cheese, eggs, parsley, basil, salt and pepper. Form into 1 1/2" meatballs. In a large skillet, thoroughly brown meatballs on all sides in vegetable oil; drain fat. Add sauce. Simmer, covered, 20 to 25 minutes or until meatballs are thoroughly cooked. Serve over hot, cooked spaghetti.
