Ingredients
- 1 garlic clove
- 1 lb spinach (fresh)
- 1/4 c water
- 1/2 ts salt
Cook the spinach without added water in a covered pot fro just a few minutes until tender & very bright green. Transfer to a blender & with 1/4 cup water, puree till very smooth. Place in a small bowl. Thin to desired consistency & season with garlic, salt & pepper. Serve on cold pasta or on hot baked potatoes.
