Ingredients
- 1 garlic clove
- 60 gr spinach (fresh)
- 60 ml water
- 1 gr salt
Cook the spinach without added water in a covered pot fro just a few minutes until tender & very bright green. Transfer to a blender & with quarter cup water, puree till very smooth. Place in a small bowl. Thin to desired consistency & season with garlic, salt & pepper. Serve on cold pasta or on hot baked potatoes.
