Ingredients
- 2 eggs (whole)
- 475 ml milk
- 375 gr all purpose flour
- 200 gr sugar
- 170 gr raisins
- 150 gr mashed banana
- 110 gr butter
- 100 gr nuts (finely chopped)
- 18 gr baking powder
- 3 gr cinnamon
- 3 gr salt
Preheat oven 400 degrees Combine flour, sugar, baking powder, cinnamon and salt; make a well in center. In another bowl combine milk, bananas, butter and eggs; add to well in the dry ingredients. Add chips and half c nuts, stir until dry ingredients are just moistened. Spoon mixture into greased or paper lined muffin cups. Filling each one 0.75 full. Sprinkle approximately 1 tsp chopped nuts over each muffin. Bake 18-20 minutes Cool 5 minutes, and then remove from pans. Makes 9 3 inch muffins NOTE: this is made for the JUMBO muffin tins.
