Ingredients
- 1 orange grate rind
- 1 egg
- 250 gr flour
- 200 gr sugar
- 150 ml buttermilk
- 140 gr cranberries (raw chopped)
- 65 gr nuts (chopped)
- 30 ml oil
- 7 gr baking powder
- 2 ml soda
- 1 gr salt
Sift together flour, salt, baking powder, soda and sugar. Grate rind of the orange, extract the juice, and add 2 tablespoons melted shortening, or salad oil, and buttermilk to make 0.75 cup liquid. Beat egg well, combine with above liquid, and add to the dry ingredients. Add chopped nuts and raw cranberries, chopped or coarsely ground. Mix well. Pour in greased loaf pan. Bake 160ÂșC for 1 hour. Store 24 hours in refrigerator before cutting. Great for the holidays! Kay.
