Ingredients
- 1 egg
- 375 gr all purpose flour
- 240 ml molasses preferably (light)
- 240 ml water (hot)
- 100 gr sugar
- 95 gr shortening
- 7 ml soda
- 5 gr ginger
- 3 gr cinnamon
- 1 gr salt
Cream together shortening and sugar. Beat in the egg, then the molasses. Sift together the dry ingredients; stir into molasses mixture. Gradually add the hot water, beating until smooth. Line muffin pans with paper baking cups. Fill two third full. Bake at 180ÂșC or 20-25 minutes or till done. Touch lightly with finger done if it bounces back. NOTE: My extra special muffins!
