Ingredients
- 3 eggs
- 500 gr flour
- 450 gr brown sugar
- 375 gr zucchini (grated)
- 240 ml oil
- 65 gr nuts (chopped)
- 16 ml molasses
- 14 gr vanilla
- 5 ml soda
- 5 gr cinnamon
- 3 gr salt
- 2 gr allspice
- 2 gr nutmeg
- 1 gr baking powder
Beat eggs, oil, & brown sugar together. Add vanilla, zucchini, & molasses. Mix dry ingredients together. Add to the zucchini "wet" mixture. Add nuts. Mix well. Bake in floured loaf pan at 180ºC for approximately 1 hr.
Larry bakes bread when we grow zucchini. This is my favorite version. His is the Light bread version. I have used both recipes for years. Don't remember the original inspiration, this has been tweaked with a lot over time.
