Braised Sweetbreads

• 2 shallot (finely minced)
• 1 1/2 sweetbreads calfs
• 240 ml dry sherry
• 240 ml low-sodium chicken broth
• 120 ml whipping cream
• 45 ml cooking oil flavorless
• 18 gr butter (unsalted)
• 16 gr flour
• 1 gr salt
• 1 gr black pepper (freshly ground)
