- 1 box sure-jell fruit pectin

- 120 gr fully ripe peaches
- 60 gr crystallized ginger (finely chopped)

- 575 gr fully ripe peaches
- 475 ml water in a bottomed saucepan (heavy)
- 200 gr sugar
- 240 ml whipping cream
- 2 ml lemon juice
