Ingredients
- 6 maui onion (diced)
- 3 pounds navy beans northern
- 16 oz karo blue label syrup looks like molasses
- 2 pounds salt pork (sliced)
- 14 oz bottle ketchup
- 1/2 pound brown sugar
- 1 tablespoon baking soda
- 1 tablespoon salt
Wash beans; soak overnight in a large bowl with plenty of water. Next day drain; place beans in a large pot in fresh water and bring to a boiling point. Add 1 tablespoon baking soda. Stir for a few minutes. Drain in colander. Rinse pot and return beans to pot with fresh water. Bring to a boil and reduce heat to a simmer. Cook until tender. Add 1 tablespoon salt and simmer for an additional 5 minutes. Drain; retain water. In a large casserole mix beans, Karo syrup, brown sugar, ketchup, sliced salt pork and diced Maui onions. Bake in slow oven (275-300 degrees) for about 3 hours or longer. Add retained water, as needed. Absolutely fabulous beans!
