Apple Charlotte Passover Cake

Ingredients

In bowl beat until thick and lemon colored: 3 egg yolks, two third cup sugar, 1 pinch salt, stir in: 2 cups apples; grated, one third cup matzo meal, 2 T. lemon rind grated, 1 T. plum brandy, fold in: 3 egg whites, stiffly beaten, turn into greased 20 cm spring form: Sprinkle with: 4 T. pecans ground. Bake at 350 deg. 35 minutes or until golden brown and firm. Cool before removing sides of pan.. ----
