Ingredients
- 2 eggs (beaten)
- 325 gr all purpose flour
- 270 gr sugar
- 190 gr apples (peeled)
- 140 gr cranberries (chopped)
- 130 gr carrots (shredded)
- 120 gr black walnuts (chopped)
- 120 ml vegetable oil
- 14 gr double-acting baking powder
- 9 gr baking soda
- 5 gr cinnamon (ground)
- 1 gr salt
In a large mixing bowl, combine apples and sugar. Gently fold in chopped cranberries, carrots, and nuts. Combine dry ingredients; add to mixing bowl. Mix w ell to moisten dry ingredients. Combine eggs and oil; stir into apple mixture. Fill 18 greased muffin tins two third full. Bake at 190ÂșC or 20-25 minutes. Cool 5 minutes before removing from pans. Recipe By : Jo Anne Merrill
