Ingredients
- 3 eggs (beaten)
- 800 gr sugar
- 375 gr flour
- 350 ml vegetable oil
- 260 gr carrots (grated)
- 240 ml milk
- 200 gr pecans (chopped)
- 9 gr vanilla
- 5 ml soda
- 5 gr butter
- 4 gr vanilla
- 3 gr salt
- 3 gr cinnamon
- 1 package pineapple (crushed)
Into a large mixing bowl sift dry ingredients. Add eggs, oil, carrots, & pineapple. Mix well. Add vanilla & pecans. Bake in tube pan or 6.5x 27 cm oblong cake pan for one hr. at 350 degrees. Glaze with the following, if desired. Glaze: Combine sugar & milk in saucepan. Bring to a boil & cook over low heat until mixture forms a soft ball in water. Cool. Add butter & vanilla; beat until creamy. Pour over cake. ~
