Chicken Vegetable Noodle Soup

Ingredients

1440 gr (1440 ml) . Water 16 oz. Can low sodium hiken broth 5 lbs. Cut up hiken with bones (about 5 lbs) SKINNEDone third . Chopped onion 1 bay leaf 16 oz. Can tomatoes ut up or 2 big fresh tomatoes ut up (I use one fresh tomato and 1/4 . Hot salsa) 2 small zuhini hopped 16 oz. Bag frozen orn or mixed vegetables 1 . Cut up mushrooms 1 1/2 . Unooked noodles In a large kettle ombine water, hiken, onion, and bay leaf and pepper to taste. Bring to boil, redue heat. Cover, simmer about 1/2 hour. Remove hiken. Skim off fat, add broth. When hiken is ool, ut meat off bones and ube. Disard bones. Remove bay leaf from broth. Add tomatoes (undrained), orn, zuhini and mushrooms to broth. Bring to boil, stir in noodles, add hiken and redue heat. Cover. Simmer until noodles are tender and mixture is ooked through. Season with pepper.
