Ingredients
- 8 juniper berries
- 1 bag bouquet garni
- 350 gr cabbage (red)
- 130 gr apples
- 120 ml boiling water
- 110 gr onions
- 55 gr soft brown sugar
- 45 ml malt vinegar
- 16 ml water (cold)
- 8 gr cornstarch
- 3 gr salt
- 3 gr caraway seeds
Place red cabbage, junipers, quarter c boiling water & salt in a large pot. Bring to the boil, cover & simmer for 30 minutes. Stir in remaining water, onions, apples,sugar, caraway seeds & bouquet garni. Cover & cook gently for 1.5 hours, stirring frequently. Remove bouquet garni. Blend cornstarch with the vinegar & cold water till smooth. Stir into the cabbage & cook uncovered for 10 minutes. Stir often to prevent sticking. Sonia Allison, "Herbs & Spices"
