Manhattan Island Clam Chowder
- 24 littleneck clams
- 6 tomatoes (fresh)
- 1 onion
- 700 ml water to the stockpo
- 240 ml dry wine (white)
- 100 gr cracker crumbs
- 65 gr pork fatback
- 7 gr parsley (fresh)
- 5 gr butter
- 2 gr thyme (dried)
