- 2 eggs
- 2 c flour
- 1 1/2 c cranberries (fresh)
- 1 c sugar
- 3/4 c apple juice
- 6 oz cream cheese
- 1/2 c nuts (chopped)
- 1/4 c margarine
- 1 1/2 ts baking powder
- 1/2 ts baking soda
- 1/2 ts salt
Grease a 9 x 5" loaf pan with melted butter or margarine. Line bottom and sides with wax paper and grease again. Set aside. Combine cream cheese and 1 egg in a blender or food processor until smooth and creamy. Set aside. Combine the flour, sugar, baking powder, soda and salt. Whisk in the apple juice, melted margarine and 1 egg. Stir in the cranberries and walnuts. Spoon half of the batter into the prepared pan. Spoon cream cheese mix over the batter. Top with remaining batter, spreading carefully. Bake in a preheated 350~ oven 70-75 min. Cool 15 minutes before unmolding. Remove wax paper and cool completely. Wrap well and refrigerate. Bring out of refrigeration 1 hour before serving.
