Ingredients
- 1 carrot
- 1 green pepper
- 2 c pineapple (chopped fresh)
- 2 oz crumbled blue cheese
- 3 tb wine vinegar (white)
- 3 tb unsweetened pineapple juice
- 1 tb honey
- 1 ts oil
gently. Combine vinegar, and the next 3 ingredients and stir well with a wire whisk. Pour over pineapple mixture and toss. Cover and chill 1 hour. Top with blue cheese just before serving.
