Ingredients
- 6 tomatoes (plum)
- 1 shallot
- 1/2 dice
- 1/2 c olive oil
- 2 tb sherry vinegar
- 1 tb cilantro (chopped fresh)
- 1 tb parsley (chopped fresh)
- 1/2 ts thyme (chopped fresh)
- 1 slice serrano chile
Salt and ground black Pepper to taste. Mix all ingredients together in medium bowl. Serve within 2 hours.
