Ingredients
- 2 cherry tomatoes
- 1 diagonal (pieces)
- 1 shallot (minced)
- 1 safflower
- r vegetable oil
- 1/2 c snow peas (fresh cut into)
- 1 tb pine nuts (toasted)
- 1 1/2 ts wine vinegar (red)
- 1/8 ts pepper
- 1 slice zucchini
Place Peas in A Vegetable Steamer Over Hot Water. Cover, Steam 2 Min. OR Until Crisp Tender. Drain & Rinse Under Cold Water. Combine Peas, Zucchini, Tomatoes & Pine Nuts in A Medium Bowl. Combine Shallot, Vinegar, Oil & Pepper; Mix Well With A Wire Whisk. Pour Over Vegetables & Toss Gently To Mix Well. Cover & Chill Thoroughly. (Fat 6. Chol. 0.)
