Ingredients
- 2 egg whites
- 1 3/4 c flour
- 1 c zucchini (shredded)
- 3/4 c raisins
- 3/8 c water
- 3/8 c sugar
- 1/2 c wheat bran
- 1/4 c applesauce
- 4 tsp baking powder
- 1 tsp cinnamon
In a med bowl, combine dry ingred.
Stir in zucchini. In a sm. bowl, mix water, applesauce and egg whites or egg replacer.
Add to flour mixture, mixing just until moistened.
Stir in raisins.
Spoon into a sprayed 8 x 4" loaf pan.
Bake in a 350 deg. F. oven 50 -55 min or until golden brown. Cool 10 min.
Remove from pan. Cool completely on a wire rack.
