Ingredients
- 3 eggs
- 260 gr carrots grated
- 250 gr all purpose flour
- 190 gr peeled apples
- 150 gr sugar
- 120 ml milk
- 120 ml vegetable oil
- 85 gr raisins
- 60 gr sliced almonds
- 40 gr flaked coconut
- 9 gr baking soda
- 7 gr vanilla extract
- 4 gr ground cinnamon
- 1 gr salt
In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla. ix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients. Fill greased of paper lined muffing cups three-fourths full. Bake at 190ÂșC or 20-25 minutes or until muffins test done.
