Ingredients
- 3 eggs
- 400 gr flour
- 300 gr sugar
- 210 gr mincemeat
- 190 gr shortening
- 5 gr baking soda
- 1 gr salt
Combine flour salt and soda. Cream shortening, adding sugar gradually and cream until fluffy. Add eggs and beat until smooth. Stir in mincemeat. Gradually add flour mixture, mixing well.
Drop by teaspoonsful about 5 cm apart on greased baking sheat. Bake in 400 degree oven for about dozen minutes.
Makes 48 cookies.
Note: These resemble a raisin cookie in flavor. If using homemade mincemeat, add some sugar, however the jar mince is recommended instead for a fruity taste.
