Ingredients
- 3 ears
- 2 eggs
- 375 gr corn kernels
- 130 gr flour
- 120 gr cornmeal
- 120 ml buttermilk
- 60 ml oil
- 16 ml honey
- 8 gr peppers (ground dried red)
- 5 gr baking powder
- 3 gr salt
- 2 gr baking soda
Preheat oven to 220ºC .
In large mixing bowl, beat eggs, add buttermilk, oil, honey, hot red pepper, corn.
Stir to blend. In smaller bowl, sift cornmeal, flour, baking powder, baking soda and salt.
Add dry to wet ingredients and stir to blend.
Drop little mounds of batter (about 2 tablespoon each) onto baking sheet, leaving 1 cm between.
Bake for 20 minutes until golden brown.
Let rest for a minute before removing from sheet.
