Ingredients
- 99 egg substitute
- 3 egg beaters
- 400 gr sugar
- 375 gr all purpose flour
- 260 gr zucchini coarsely (shredded)
- 170 gr seedless raisins
- 120 ml applesauce
- 14 gr vanilla extract alcohol free
- 8 gr cinnamon
- 5 gr baking soda
- 1 gr double-acting baking powder
Peel, remove seeds and shred zucchini. Sift dry ingredients together set aside. Beat eggs until foamy. Gradually add sugar, applesauce, vanilla and zucchini beat until smooth. Add dry mix. Stir in raisins. Place batter in two Pammed and floured loaf pans (8- 1 cm x 4- quarter inch). Bake at 180ÂșC or one hour.
