Ingredients
- 2 gelatin envelopes (unflavored)
- 700 ml nonfat yogurt cheese
- 240 ml lime juice
- 240 ml boiling water
- 100 gr sugar
- 60 ml water (cold)
- 6 gr lime rind
Dissolve gelatin in cold water. Add boiling water and stir until dissolved. Add lime juice, rind and sugar. Stir well. Mix in yogurt cheese until smooth (food processor works well). Pour into a deep 23 cm pie pan, or pour into small individual-serving-size containers.
Chill until firm. Serves 10.
