Maple Breakfast Cake

Ingredients

Preheat oven to 200ºC Using baking spray with flour spray a 23 cm square cake pan. Set aside. In a large bowl sift together pastry flour, whole wheat flour, baking powder, salt, nutmeg and cinnamon. In a separate medium bowl combine beaten egg, milk, two third cup maple syrup and melted butter. Add milk mixture to flour mixture. Mix well. Turn batter into prepared pan. Sprinkle top with a dash of cinnamon and drizzle with remaining 2 tbls maple syrup. Bake for 35 minutes or until a wooden pick inserted in the center comes out clean. Remove from oven and let cool 10 minutes. ----
