Ingredients
- 2 bell peppers (roasted red)
- 1 onion (red)
- 240 gr feta cheese
- 140 gr black greek olives (fresh)
- 120 ml olive oil
- 16 ml balsamic vinegar
- 6 gr garlic (minced)
- 4 gr thyme (fresh)
Salt and freshly ground blac Lemon juice *Combine the peppers, feta and olives in a large bowl. Add the olive oil and toss gently. Add the remaining ingredients and toss gently again. Adjust seasonings, cover and chill at least 5 hours before serving. Serve this with toasted pita bread as an appetizer. Fran/CA
