Ingredients
- 1/4 apple
- 240 gr diet ginger ale
- 140 gr cranberries
- 26 gr celery (finely chopped)
- 10 gr sweetener
- 8 gr gelatin (unflavored)
- 7 ml lemon juice (fresh)
- 2 gr orange peel (grated)
Sprinkle gelatin over 2 tb ginger ale; let stand 5 min to soften. Combine remaining ginger ale, cranberries, lemon juice and orange peel in a saucepan. Bring quickly to a boil. Remove from heat. Add softened gelatin and sweetener; stir until gelatin dissolves. Chill until partially set. Stir in celery and apple. Spoon into a rinsed mold. Refrigerate at least 4 hours until set. each serving about half cup half Fruit & Veg. Choice 6 g carbohydrate, 1 g protein (28 calories)
