Ingredients
- 2 eggs
- 250 gr pineapple (fresh finely chopped)
- 220 gr all purpose flour
- 170 gr packed brown sugar
- 100 gr macadamia nuts coarsely (chopped)
- 45 gr butter
- 14 gr sugar
- 9 gr baking powder
- 1 gr salt
- 1 gr baking soda
- 1 gr cinnamon (ground)
In a mixing bowl, beat butter, eggs and brown sugar. Combine the flour, baking powder, salt, baking soda and nuts; stir half into egg mixture. Add pineapple, then remaining flour mixture. Pour into a greased 8x4x2 inch loaf pan. Combine sugar and cinnamon; sprinkle over loaf. Bake at 180ÂșC or 50-55 minutes or until bread tests done. Cool on a wire rack.
