Ingredients
- 2 eggs (beaten)
- 1 sugar for coating
- 500 gr flour
- 250 gr pumpkin
- 200 gr sugar
- 120 ml buttermilk
- 30 ml oil
- 18 gr baking powder
- 6 gr salt
- 2 gr baking soda
- 2 gr nutmeg
- 1 gr cinnamon
- 1 gr ginger (ground)
Beat eggs and sugar until light and fluffy. Add oil, pumpkin and buttermilk. Mix dry ingredients together and add to egg mixture. Chill 1 hour. Turn out on floured board and roll to 1 cm thickness. Cut with a doughnut cutter. Deep fry (375-degrees) until brown on one side. Turn over. Brown other side. Drain well on paper towels and roll in sugar. Recipe By :
