Ingredients
- 2 eggs
- 240 ml milk
- 190 gr flour
- 120 gr rice (cold cooked)
- 50 gr melted shortening
- 26 gr sugar
- 14 gr baking powder
- 1 gr salt
Sift flour, measure, and sift with baking powder and salt. Combine rice, milk, eggs, shortening, and sugar. Add dry ingredients. Beat only until smooth. Fill well-oiled muffin tins two third full. Bake in hot oven (435 F) about 30 minutes. 8 servings. Mrs. W.B. Baker, Pueblo, CO.
