Ingredients
- 2 garlic (cloves)
- 1 chunks
- 950 ml beef broth
- 800 gr italian sausage (hot)
- 525 gr tomato puree
- 240 ml wine (red)
- 200 gr green pepper
- 180 gr onions
- 100 gr celery with tops (chopped)
- 5 gr oregano (chopped)
- 2 gr parsley (chopped)
- 2 gr basil (chopped)
Cook the sausage in a large soup pot. Brown well on all sides. Remove the meat and reserve enough fat to saute the onions, pepper, celery and garlic. Saute until the onions are translucent. Add the meat and the rest of the ingredients except the cheese and macaroni. Simmer about 1 hour and serve with cooked rotelli and parmesan cheese.
