Ingredients
- 2 eggs
- 160 ml honey
- 130 gr wheat flour (whole)
- 130 gr unbleached all-purpose flour
- 120 gr walnuts (chopped)
- 80 ml molasses
- 100 gr mashed sweet potatoes
- 80 ml oil
- 14 gr baking powder
- 5 gr ginger (freshly grated)
- 1 gr cinnamon
- 1 gr nutmeg
- 1 gr salt
- 1 gr mace
Preheat oven to 160ºC . Oil a 23 cm x 13 cm x 8 cm loaf pan. In a large bowl, blend molasses, honey, sweet potatoes, oil and eggs. In a small bowl, combine remaining ingredients. Add to potato mixture and stir untill well mixed. Spoon batter into loaf pan and bake until a toothpick inserted in middle comes out clean, about one hour. Turn out onto a wire rack to cool before slicing. Hint: Serve it with nonfat cream cheese.
