Ingredients
- 2 zucchini
- 1 onion
- 350 gr beef (lean ground)
- 300 gr tomatoes (canned)
- 60 gr rice (uncooked)
- 60 ml kikkoman soy sauce
- 2 gr garlic powder
- 1 gr basil (dried)
Crumble beef in 23 cm square microwave-safe baking dish; sprinkle with garlic. Cover; microwave on High 3 minutes. Meanwhile, cut zucchini in half lengthwise, then crosswise into 1 cm slices. Add zucchini, onion, tomatoes, rice, soy sauce, basil and half cup water to ground beef, stirring to combine. Cover and microwave on High 27 minutes, or until rice is tender; stir frequently.
