Ingredients
- 2 eggs (slightly beaten)
- 240 ml buttermilk
- 120 gr cornmeal (yellow)
- 95 gr flour
- 55 gr cheddar cheese (shredded)
- 60 ml soy oil
- 34 gr green chilies (chopped)
- 32 gr soy flour
- 26 gr sugar
- 18 gr baking powder
- 3 gr salt
Preheat oven to 425 degrees. Spray muffin pans with non-stick spray. In medium bowl, combine first 5 ingredients. Stir together buttermilk, soy oil and eggs, and add to dry ingredients. Gently stir in cheese and green chilies. Pour into muffin pan. Bake for 22 to 25 minutes. Yields dozen muffins.
