- 6 egg yolks
- 1 lemon peel (grated)
- 1 salt and pepper
- 1/2 stick butter
- 1,900 ml basic chicken stock
- 475 ml milk
- 240 ml lemon juice (fresh)
- 60 gr long rice (grain)
- 16 gr cornstarch
Mock Chicken
- 8 bean curd sheets (dried)
- 180 ml basic chicken stock
- 30 ml soy sauce (light)
- 14 gr sugar
- 16 ml oriental sesame oil
- 3 gr salt
