Ingredients
- 2 eggs
- 1 1/2 c brown sugar packed (light)
- 1 1/2 c carrots
- 1 1/2 c flour unsifted
- 1/2 c butter
- 1/2 c raisins
- 1/2 c walnuts
- 1 t vanilla
- 1/2 ts baking soda
- 1/2 ts baking powder
- 1/2 ts salt
Preheat oven to 350 F (moderate). Grease a 9by 13-inch baking pan. Mix sugar and fat. Add eggs and vanilla; beat. Stir in dry ingredients. Add raisins and carrots; stir. Spread mixture into baking pan; sprinkle with walnuts. Bake about 40 minutes or until a toothpick inserted in center comes out clean. Cool; cut into squares. Calories per brownie: About 150
