Ingredients
- 3 eggs
- 3 c flour
- 1 1/2 c sugar (white)
- 1 1/4 c corn oil
- 2 c carrots (grated)
- 2 ts baking powder
- 1 1/2 ts baking soda
- 2 ts cinnamon
- 1/4 ts salt
Preheat oven to 345 F. Cream sugar and oil, add eggs one at a time, beat well after each. Add dry ingredients and mix well. Stir in carrots, pour into prepared pans and bake 20 -25 minutes or until center springs back when touched. This recipe is from Noah' Restaurant on Laurier Ave. and was requested by a client.
