Ingredients
- 1 onion
- 1/2 thickly smoked bacon (sliced)
- 21 ounce pork
- 12 ounce bottle ketchup
- 1 1/4 cups packed brown sugar (light)
- 1/2 cup sweet gherkin juice
- 1/4 cup molasses
- 1 tablespoon mustard (yellow)
- 1 teaspoon apple cider vinegar
Preheat oven to 350 degrees. In a 2-quart casserole dish combine all ingredients except bacon; season to taste with salt and pepper. Criss-cross top with bacon strips. Cover with aluminum foil. Bake for 1 hour. Remove foil and continue to bake 30 minutes longer. Serve hot or cold
