Ingredients
- 1 onion
- 1/2 thickly smoked bacon (sliced)
- 600 gr pork
- 300 ml bottle ketchup
- 280 gr packed brown sugar (light)
- 120 ml sweet gherkin juice
- 60 ml molasses
- 16 ml mustard (yellow)
- 5 ml apple cider vinegar
Preheat oven to 350 degrees. In a 2 litre casserole dish combine all ingredients except bacon; season to taste with salt and pepper. Criss-cross top with bacon strips. Cover with aluminum foil. Bake for 1 hour. Remove foil and continue to bake 30 minutes longer. Serve hot or cold
