Ingredients
- 2 pita rounds
- 1/2 c yogurt (plain)
- 1/2 c dry cashews (roasted)
- 1/2 c cucumber (chopped)
- 1/4 c onion (chopped red)
- 3 pinch snipped (fresh)
In a medium mixing bowl stir together yogurt, cilantro or parsley, and curry powder. Stir in cashews, cucumber, sweet pepper and red onion. Spoon evenly into split pita rounds.
