Ingredients
- 1 egg
- 160 gr all purpose flour
- 150 gr sifted powdered sugar
- 120 ml applesauce
- 80 ml molasses (light)
- 55 gr butter
- 40 gr raisins
- 20 ml lemon juice
- 2 gr baking soda
- 1 gr cinnamon (ground)
- 1 gr salt
In a medium mixing bowl combine flour, baking soda, cinnamon, and salt. Cut in butter or margarine till the mixture resembles coarse crumbs. In a small mixing bowl stir together egg, applesauce, and molasses; stir into flour mixture just till moistened. Stir in raisins. Turn into a greased and floured 8x8x2-inch baking pan. Bake in a 180ÂșC oven for 25 to 30 minutes or till a wooden toothpick inserted in the center comes out clean. Cool in the pan 15 minutes. Remove from pan, if desired. Combine powdered sugar and lemon juice; spread over warm cake. Serve warm or cool. ----
