Ingredients
- 3 eggs
- 400 gr sugar
- 350 ml vegetable oil
- 290 gr granny smith apple (peeled)
- 250 gr all purpose flour
- 140 gr pecans (chopped)
- 60 gr flaked coconut
- 7 gr vanilla
- 5 gr baking soda
- 3 gr salt
*Any tart cooking apples may be used. Mix sugar and oil, add eggs and beat well. Combine flour, soda and salt. Add flour mixture to beaten egg mixture. Stir in vanilla, apples, coconut, and pecans. Mix well. Spoon butter into a greased tube pan. Bake at 160ÂșC for 1 hour and 20 minutes. Allow cake to cool to room temperature before removing from pan.
