Ingredients
- 2 egg whites whipped
- 190 gr unbleached flour
- 170 gr brown sugar packed
- 100 gr cranberries (chopped)
- 75 gr apples
- 60 ml applesauce (room temp)
- 5 gr baking soda
- 4 gr vanilla
- 3 gr cinnamon
- 1 gr salt
Preheat oven at 350. Prepare dozen muffin pans with cooking spray and flour. In a mixing bowl, combine flour, baking soda, cinnamon, and salt. In another mixing bowl, combine egg whites, brown sugar, applesauce, vanilla, apples, and cranberries. Mix dry ingredients with wet ingredients just until moistened. Use an ice cream scoop to fill muffin tins two third full. Bake 20 to 30 minutes, or until lightly browned.
