Ingredients
- 3 eggs
- 375 gr flour
- 325 gr blackberry jam
- 200 gr sugar
- 170 gr butter
- 180 ml buttermilk
- 170 gr raisins
- 140 gr nuts (chopped)
- 5 gr baking soda
- 4 gr vanilla
- 3 gr cinnamon
- 2 gr nutmeg
Cream butter and sugar well. Add eggs, one at a time and cream after each addition. Add jam. Sift together soda, spices and 2 cups flour. Add remaining flour to cream mixture alternately with buttermilk, starting and ending with dry ingredients. Stir in raisins, nuts and vanilla. Pour into two greased 23 cm cake pans. Bake at 160ÂșC or 30-45 minutes, or til done. *See Susan Emmick's Caramel Icing
